Juicy Delicious In-Season Peach Crisp

Ingredients:

For the Peach Filling:

6-8 ripe peaches, peeled, pitted, and sliced
1/4 cup granulated sugar
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
For the Crisp Topping:

1 cup old-fashioned rolled oats
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, cold and cut into small cubes
Instructions:

Preheat the Oven:

Preheat your oven to 350°F (175°C).
Prepare the Peach Filling:

In a large bowl, combine the sliced peaches, granulated sugar, flour, vanilla extract, and ground cinnamon. Toss the mixture gently until the peaches are coated. Transfer the peach mixture to a greased 9x9-inch baking dish or a similar-sized baking dish.
Make the Crisp Topping:

In another bowl, combine the rolled oats, flour, brown sugar, ground cinnamon, and salt. Mix well.
Add the cold cubed butter to the oat mixture. Use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs and the butter is evenly distributed.
Assemble and Bake:

Sprinkle the crisp topping evenly over the peach filling in the baking dish.
Bake the Crisp:

Place the baking dish in the preheated oven and bake for about 35-40 minutes, or until the topping is golden brown and the peach filling is bubbly.
Serve:

Remove the peach crisp from the oven and let it cool slightly before serving. This dessert is delicious on its own or can be served with a scoop of vanilla ice cream or a dollop of whipped cream.
