Place oven rack in the middle and preheat to 350.
2 cups old-fashion oatmeal
1 cup sliced almonds
1 cup walnuts rough chop
Toss oatmeal, almonds and walnuts together on a cookie sheet and bake for 10-12 minutes, stirring occasionally until lightly browned. Transfer to a large mixing bowl. Reduce oven heat to 300.
1 cup peanuts
1 cup pumpkin seeds
1 cup 70% dark chocolate mini chips
½ cup dried cranberries
Stir into large mixing bowl with oatmeal & nuts.
½ to 2/3 cup of honey
½ cup to 2/3 cup peanut butter
1 Tbls butter
1 ½ Tsp vanilla
¼ tsp salt
Place butter, honey, peanut butter, vanilla & salt in a small saucepan and bring to a boil over medium heat, cook and stir for 1 minute. Pour over the toasted oatmeal mixture & mix well.
Put enough aluminum foil in pan to hang over edges, do not spray pan. Pour mixture into pan and press down firm with bottom of your largest dry measuring cup. Bake 20-25 minutes until light golden brown. Remove from oven and press down again with rubber spatula . After 1 hour lift out of the pan with aluminum foil edges. Let cool 3-4 hours before cutting.
