Garden Fresh Heirloom Tomato & Basil Bruschetta

Ingredients:

4-6 slices of rustic bread (baguette or ciabatta), cut into about 1/2-inch thick slices
2-3 medium heirloom tomatoes, diced
2-3 cloves of garlic, peeled and minced
1/4 cup fresh basil leaves, thinly sliced or torn
2 tablespoons extra-virgin olive oil
1 teaspoon balsamic vinegar (optional)
Salt and freshly ground black pepper, to taste
Instructions:

Prepare the Bread:

Preheat your oven to 375°F (190°C).
Place the bread slices on a baking sheet and brush them lightly with olive oil on both sides.
Toast the bread in the preheated oven for about 5-7 minutes, or until the slices are golden and slightly crispy. Keep an eye on them to prevent burning.
Prepare the Tomato Mixture:

In a bowl, combine the diced heirloom tomatoes, minced garlic, and sliced basil.
Drizzle the extra-virgin olive oil over the mixture and gently toss to combine.
Season the tomato mixture with salt and freshly ground black pepper to taste. Be sure to taste and adjust the seasoning as needed.

Assemble the Bruschetta:

Once the toasted bread slices have cooled slightly, top each slice with a generous spoonful of the tomato mixture. Allow some of the juices from the tomatoes to soak into the bread.

Serve:

Arrange the prepared heirloom tomato bruschetta on a serving platter.
Drizzle a bit more olive oil and the balsamic over the top for extra flavor.
Serve the bruschetta as an appetizer or a light snack. It's best enjoyed fresh!
