When Franziska Kolta wants to spend a nice sunny afternoon with her pup Prince, she takes him out for some of his favorite things: a relaxing picnic while watching the boats float on by!


What better snack for the both of them than one that shares the same theme?


ZUCCHINI BOATS of course! Filled with healthy goodness fit for a Prince (and his mama)


Ingredients:

*adapted from chefkoch.de - some of the ingredients were changed for dog-safety


· 2 large zucchini

· 1 tablespoon olive oil

· 5.3 oz. container cream cheese

· 4 button mushrooms

· 4 grape tomatoes

· 2 oz. cheddar or Gouda, grated

· 1 tablespoon parmesan cheese

· 1/4 cup breadcrumbs

· 1 tablespoon finely chopped fresh parsley


Instructions:


Preheat oven to 395 degrees

Cut zucchini in half lengthwise

Hollow out with a spoon

Save the hollowed out flesh in a separate bowl

Using a potato masher, mash the zucchini flesh until slightly pureed

Rinse and finely chop button mushrooms, add to puree

Add cream cheese to puree

Quarter the grape tomatoes and add to puree

Continue to mash with potato masher to mix well

Lightly brush olive oil inside the zucchini 'boats'

Fill will puree

Top puree with grated cheese (cheddar or Gouda)

Cover with foil and bake for 20 minutes

Remove foil and lightly sprinkle parmesan cheese and breadcrumbs across top

Lightly dust with additional grated cheese on top of pram and breadcrumbs

Bake uncovered for an additional 8 minutes

Once out of oven, top with a pinch of fresh parsley for garnish


Let cool before packing in your picnic basket to share with your furry friend!*
